Measuring principle: Tenderness refers to the shear force required when cutting meat. Shear force is the force used by the tool of the testing instrument to cut the tested meat sample. The instrument's sensor records the force applied when the tool cuts the meat sample, and takes the peak shear force (maximum force) as the tenderness value of the meat sample.
