The ST-16A Meat Tenderness Tester is a dedicated testing device developed and produced in full compliance with the shear force method specified in agricultural industry standard NY/T 1180-2006 for meat tenderness determination.
This tenderness tester simulates the chewing action of human teeth on muscle tissue and various food materials. It measures the shear force of food and muscle samples, displays test data digitally, and quantifies the tenderness of test specimens.

Working Principle
Tenderness is defined as the shear force required to slice through meat tissue. Shear force refers to the load exerted by the instrument’s cutting blade when severing a meat sample.
The built-in sensor and measuring unit record the real-time force applied during cutting, and the peak shear force value (maximum load reading) is taken as the final tenderness index of the tested meat sample.
Tenderness acts as a critical indicator for evaluating the physical properties of meat products. It reflects the structural features of meat proteins, intramuscular fat distribution and fat content within muscle fibers.
